The 14-year owner of an Italian restaurant has revealed why the weekend was his last in charge.

Carlo Sibilla took over Gaetano on Victoria Road in Swindon in 2010, describing it as a ‘dream’ and ‘perfect’.

But on April 17 he announced he would be departing, leading to sadness mixed with excitement for their favourite cook’s future.

Carlo said: “I’ve been almost 15 years in Gaetano - leaving there was not easy.

“I left a piece of my heart, and I'm extremely grateful for this adventure and the fantastic people I've met, who are now my friends.

“I realised that I've spent most of my life in hospitality. 

“I started working at a bar in my hometown of Taranto at age 9 and never stopped since, so I've decided it's time for a break to enjoy life with my loved ones. 

“First, a well-deserved holiday in Italy with my partner, Sara, who has worked with me at Gaetano all these years.”

Carlo arrived in England in April 1998 from Puglia and began working as a waiter at Mario’s restaurant on Wood Street. 

He spent 12 years at Mario’s, but in 2010, ‘fulfilled his dream’ of owning my his own place when he took over Gaetano restaurant. 

He said: “Gaetano was perfect - a cozy spot with classic Italian decor, nets, and Chianti bottles on the walls.”

The restaurant has become well-liked in Swindon with one customer saying: “End of an era! We've had so many amazing meals and memories created with you both! 

“Wishing you nothing but luck, love, health and happiness!”

Carlo too looks back on his time at Gaetano fondly, musing: “I've met wonderful people who come in as clients and leave as friends. 

“My goal was to create a familiar atmosphere at Gaetano, making people feel as if they were dining in my own home and I think I did it.”

He says the ‘wine and dine’ nights, pairing Italian wines with regional cuisine, were particularly successful and introduced him to many ‘special’ people. 

During the Covid lockdown, the restaurant remained open for deliveries. “Gaetano never stopped”, said Carlo.

However, Carlo is also looking forward. He said: “I'll begin working at a new place, this time as an employee, with less stress and more time for life.”

Carlo looks forward to having a meal served to him, rather than serving it: “I'm going to dine out like a normal customer, and I can't wait.”

Carlo had his last day at Gaetano, 131 Victoria Road, on April 28.
